Banana and Date Muffin Recipe

For the perfect snack, try these tasty banana and date muffins from @healthyhappyhabits! They are quick to make and will be in the oven in less then 10 minutes.  

Ingredients 

2 x Overripe bananas (mashed)
1 x Tablespoon oil (macadamia, rice bran, coconut - whatever tickles your fancy)
1 x Egg (whisked) 
1/4 Cup milk
1/4 Teaspoon vanilla extract
1/2 Cup almond meal
1/2 Cup wholemeal flour
1/4 Teaspoon cinnamon
3 x Medjool dates, deseeded and finely diced

    Method

    Pre-heat oven to 180°C and prepare a 6 x cup muffin pan, line or oil. 

    2. In a medium bowl, combine bananas, oil, egg, milk and vanilla. Whisk together until just combined. Add in almond meal, wholemeal flour and cinnamon.

    3. Stir through the dates and pour mixture into muffin tray.  

    4. Bake for 15-20 minutes and then allow to cool.

    Makes 6.

    Choc-Almond Cookie Recipe

    Looking for a sweet treat? You need to taste these amazing Choc-Almond Cookies from @healthyhappyhabits. These delicious cookies will leave you wanting more!

    Ingredients 

    1 cup almond meal
    1/2 cup oat flour (sub in any flour you have around) 
    1/4 cup of flaked almonds
    2 tablespoons maple syrup
    1 tablespoon coconut oil, melted
    1 teaspoon vanilla extract
    1 egg, whisked
    sprinkle of salt (optional)
    50g organic dark choc chips

      Method

      1. Pre-heat oven to 180°C.

      2. In a medium bowl, combine almond meal, flour, flaked almond together. In a separate bowl, mix liquid ingredients (syrup, oil, eggs) until combined. Add to the dry mixture and mix until just comes together. Add in salt and roll into 10 small balls. 

      3. Press the balls onto lined paper and add in 4-6 chocolate chips on top of each cookie. 

      4. Bake for 12-15 minutes and then allow to cool on a tray. 

      Makes 10

      Raw Peppermint Bar Recipe

      Raw Peppermint Bar Recipe

      Christmas is just around the corner so we caught up with our friends Ashley & Brittney at Twins Kitchen (@twinskitchen) to share their favourite holiday recipe. Raw, vegan, light and nutritious, these Raw Peppermint Bars are creamy, delicious, and simple to make. Made with cashew cream, coconut oil, dates, match powder, and peppermint extract, this Christmas inspired dessert is guaranteed to be a hit.

       

      Ingredients

      For Crust:

      1 cup almonds

      1/2 cup rolled oats

      1 heaping cup medjool dates, pitted

      2 tbsp cacao powder

      1 tbsp coconut oil

      1 tbsp almond milk

      Pinch of sea salt

      For peppermint layer:

      1 cup cashews, soaked

      3 tbsp maple syrup

      1 tbsp coconut cream

      2 tsp matcha powder

      1 tbsp coconut oil

      1 tsp vanilla

      Pinch of sea salt

      4 drops peppermint extract (adjust to taste)

       

      Instructions

      For the crust:

      1. Remove pits from dates and chop. If the dates are hard, soak in hot water for 5-10 minutes until soft.
      2. Add all required ingredients to a food processor and process until a crumbly, loose dough forms.
      3. Line a dish with parchment paper and press the crust evenly into the dish. Refrigerate until ready to pour the peppermint layer.

      For peppermint layer:

      1. Soak cashews overnight, then drain and rinse.
      2. Add all required ingredients to a blender and process until smooth and creamy. Adjust peppermint flavor to taste. Add another tbsp of coconut oil if too thick.
      3. Pour mixture evenly over the crust and freeze for 4-5 hours.
      4. If desired, sprinkle cacao nibs or coconut over the peppermint layer before freezing.
      5. Cut into squares when ready to serve and enjoy. Freeze up to 4 weeks.
